He is heading out for basic training, then on to training for his position (whatever) in the National Guard. Tyler has never been away from family except on his trip to England. He was with friends then and it was only for 7 days. I know he is a little worried too. I can't even stand to think about how he will be yelled at and cussed at. I know he is taking his Bible too. I am proud of him for that.

This comes as I am dealing with some other issues around our house. My emotions are just every where. The last two nights I have been in bed by 9 pm. That is early for me. I have not been eating lots and my body is really hurting. Stress it is not fun on the body.

I know my son will come back as a better man, but I love him just like he is. I am asking that God puts a hedge of protection around him over the next 6 months.

I love you, Tyler!

Challenges

I have a big challenge. Afterward reading some of the blogs from my cousins, I feel so inadequate. I really need to find time to read my Bible and have devotions. Now that I have the Bible on my Kindle I am going to try to use time I sit with Lynda to read my Bible and do a devotional. I play games on my Kindle, I read books on my Kindle, why shouldn't I put it to good use and read my Bible.

If anyone out there reads my blog, I would like for you to keep me accountable. I will try to post each day what I read or what I did for that day. I want to grow in Jesus more each day. I am praying that this will be a good way to do that. Even when I get a full time job, I can continue doing this on my lunch hour.

I appreciate your prayers for me in this matter.

relaxing

It was a good day. Church this morning. Enjoyed the message from Ephesians 1. I went with mom and dad so I didn't have my Bible. However, I did have my Kindle. I used it, but not something I would want to do all the time. It takes a little time to get from one book to another. I am thankful that we are adopted into God's family, that He gaves us freewill and a choice to make, but He knew already what we would do.

Went to work at CJ until 6:30. Been at home and resting. Have another day off tomorrow and looking forward to it. I think I will be doing more cleaning too. If things work out right, maybe I will get my sewing machine out.

Caroline hasn't decided if she is going with her dad for a while or just staying home with me.

We have been invited by a schoolmate to go to Toy Story on Ice next Sunday. I am really excited. She bought the tickets for us. I am not telling Caroline until we are closer to the date. I think it will be fun. She is taking her two grandsons and Caroline will love having the kids around.

jLooking forward to new recipes next week. We had one Thursday night that was really good. I will post for you.

Hamburger Potato Casserole

1 lb of hamburger (I use more cuz Eric likes lots of meat)
3 cups peeled potatos. ( I used about 6, but could have put more in)
1 can of cream of mushroom soup (I actually used two cans. I poured a can on top because the cheese and meat was drying out. I will change the way I layer it the next time.)
1/2 cup chopped onion
3/4 cup milk (per can of soup, if you use two cans of soup)
salt and pepper to taste
Frozen corn (I added this) I used about 1/2 bag of a small bag. You could probably add other veggies if you want.
1 cup of shredded Cheddar Cheese

1. Preheat oven to 350 degrees
2. In medium pan, brown hamburger and drain fat.
3. In bowl, mix together soup, onion, salt and pepper, and milk (and any veggies you use)
4. Alternate layers of potatos, soup, hamburger in (2 quart) baking dish. I followed this layering, but I think it would be best to do potato, hamburger, soup. I would use the 2 cans of soup to give extra liquid.
5. Bake for 1 to 1 1/2 hours or until potatos are tender. Top with cheese and bake until cheese has melted.

We really enjoyed this meal and it was easy to put together.

Saturday

Well, I am just planning on staying in today. Some cleaning to be done, but I really want to get my sewing machine out and try to do some sewing. It has been a while, but I want to give it a try. I think it would be good to learn some things, then showing Caroline how to make projects. I never learned to sew like my mom. She made clothes for me and Eric. She is a great seamstress. She doesn't sew too much now cuz of her arthritis. I just try my hand as small things. I am excited to get back at it and see what I can do.

Long weekend! I am excited about that. Caroline is with her dad. Not sure if she is going wih him on Monday or not. Not much money to do anything if she stays here. We like to watch TV together. We need to get some games out too. It's been a while since we played games together.

Still looking for a job. Had an interview two weeks ago with Advance America, but they hired someone else. I think too much money for just the receiptionist. I am really struggling right now with finances. It is hard to live on half of what you were making. My plans will be to go to Manpower next week to see if I can get temporary work through them. I will hate leaving Lynda and Jerry, but I need to make more money to help around the house.

Everyone have a great weekend.

Things

Well, I had the day off and did get some work done. I didn't get as much done as I wanted. I had to run to the grocery, but I received a call from my pastor before I left. Advanced America/Eric Miller is looking for a secy/recpt and pastor thought I would fit the bill. He gave me the fax number. I got the information ready and my brother faxed it for me. So now we are praying that I hear something soon. It would be wonderful to have a job before Christmas.

When I got home I did a little more work and ate lunch. After lunch I felt sick so I decided to take a small nap on the couch. Well, that was at 3:10 and Caroline came home at 4:3o. So much for a small nap. I guess I needed it.

Now I am doing supper, laundry and getting ready to head out to mom's. Tomorrow is my 12 hour day with Lynda and I have to be there at 6 a.m. We stay at mom's so dad can get Caroline up and ready for school.

Recipes

Well, I tried a new recipe tonight. I have been wanting to make homemade Clam Chowder for some time now. I made it tonight. It was really easy. It called for 2 cups of milk, but I added more. I think it still needed more. I should have had more clams, but I only had one can. Here is the recipe:

1/4 cup of cut up bacon (I used the package kind already cooked)
1 onion (1/2 cup) - I didn't have onion or dried onions so I used onion powder.
2 cans (6.5 oz) of whole clams
1 medium potato / cubed (1 cup)
1/2 teaspoon of salt
Dash of pepper
2 cups of milk

1. cook bacon and onion till tender (since I didn't use either I just put my ingredients in pan waiting on the other items)
2. Drain clams / save juice then add enough water to make 1 cup of juice
3. Stir ingredients together and heat to boiling. Reduce heat and simmer for 15 minutes until potatoes are tender.
4 Add milk Heat, stir occasionally, but do not bring to a boil.

It tasted good, but I think I needed more clams. My brother seemed to like it.

Family

Since my last posting, we have had a long week. What a shock that my Aunt Betty was taken from us so suddenly. Went through the weekend just working towards getting my house in order for company. (my bedroom was cleaned - YEA) Worked hard on Monday to get things ready and cleaned. Had to get some groceries. Waited for family to get here from Tenn. Tuesday was the funeral/celebration of life. It was good to see old "friends", but not necessarily this way. I caught up with Eddie Law's children, Teresa and Troy. I have not seen them since early teens. It was good to see that we might have gotten a little older, but we still had wonderful memories and good times.

It was nice to hear several people tell me how much Aunt Betty loved me. I can say that I loved her just as much! She stood up for many times when she thought mom was being hard on me. Maybe mom wasn't and maybe I needed it, but Aunt Betty wanted the best for me no matter what.

It was good to see pictures and remember those times as well. One thing is for sure -- Aunt Betty was beautiful no matter what age.

Now the healing starts. For some, it starts now. Those are the ones that have to go through all the belongings. For some, it is now, but we won't feel it as much until we have that first family gathering. No matter what, it is a long road with good days and bad days, but days that God will be there with us no matter what.

I hope to be able to post some pictures later. Fun to look back!!!

Family

Today we lost a very precious member of our family. Aunt Betty Law was taken home to heaven in a tragic car accident. Losing a family member to death because of illness or old age is a little easier to take, but to be taken so suddenly takes a lot more to get over.

Aunt Betty was a wonderful lady, wife and mother. So many memories I have of her and the fun we had together. Maybe I can list a few:

1. Many trips we took to Florida. One time she was so sunburned that looked like a bright red crab. I think she was in bed for a few days.
2. Many weekends at her house on State Street. We would be allowed the stay up late and eat lots of junk food. She made wonderful meals.
3. She made the flowers for my wedding and they were beautiful.
4. She spoiled us rotten and enjoyed every minute.
5. She would buy dolls at Goodwill and fix them up, then gave some to Caroline. Caroline remembers that a lot.

There are so many memories. I know that God welcomed her with open arms, but our hearts are breaking.

I love you Aunt Betty and we will miss you!!!

Life

Not the greatest of weeks for me, but I know God is still in control. It started knowing that I would have a court date on Wednesday about child support. Joe was asking for less as the two boys have left the home and are on their own. As I was on the computer Monday night and talking with AJ, I find out that he is going to court. He said the gma Cox said he might need to speak, which I thought was odd. So I called the ask Tyler if his dad had asked him to go too. He quietly said "yes". I was very hurt especially since I was just finding out before the court date with no way to understand why.

On Tuesday I called Joe's attorney and he confirmed (which wasn't surprising as he talked with Joe). He said that he might have to ask them to confirm what was already in the filed papers. Why did they have to go if the paperwork was correct? He then let me know what the support would be lowered to and that he could prepare the final papers. I told him okay and that I would let him know when we get to court.

Okay I went to court to read the papers. I was okay until I found out that they wanted to reduce it $10 a month to pay for the extra Joe had paid over the last three weeks. I didn't agree and we tried to talk it out. The attorney started to badger me about why I thought it should be less than it was and I really didn't have an good reason except it was Joe's child. As it was getting close for the proceedings to start, I said "if we need to go on it, okay". Then the attorney stated,"well, if you want to make the boys take the stand." That was the last straw. He knew how I felt about them being there and even having to take the stand. I just signed and walked out.

I felt like Joe was dividing the sides. He had the boys and I have nothing. Caroline is too young to take with me and it would make no sense and only hurt her. He doesn't care and never thinks of them. Joe doesn't mind putting the kids in the middle as long as it would help his case. He is not a dad, maybe a father, but not a dad.

Caroline is going back through not wanting to go with him. She told me that she had thought about wanting a new daddy cuz Joe was not the dad she thought he would be. How said that a little girl would say that about her dad. She says that he is mean to her and yells at her. He cusses at her and takes God's name in vain. She is very hurt and ready to talk with someone. However, the person has left town for the weekend and she has to go with him this weekend. She is making herself sick just thinking about it.

I just pray that we can work this out. I hope that talking with the person we have picked will be good and that Joe will listen to him.

I was watching Dr Phil today about domestic abuse. The points on there were ones that I could say I went through before the divorce and now Caroline is going through that as well. I feel so much for her and want to help her not go through what I did.

Everyone have a good night!

Good Day

Had a great day today even though I wasn't feeling too good. Mom and I got to do a little shopping today. Went to Big Lots and just had fun. Didn't make it to work cuz not feeling too good- running a slight fever. Now I'm just trying to get caught up on shows that I tape during the week.

I miss being able to see my mom on a daily basis since I am not at school. It seems like we can't be together as much since we don't work together now. I miss that lots. We enjoy just being out shopping alone. We just take our time when we shop. Now we get to start Christmas shopping. Love to do that with her. We like going late at night when not a lot of people are out and about.

I have lots of things bought already especially for Caroline. Now I just need to write everything down that I've bought. I like an early start.

Well, it has been a good weekend. We did make it to the apple orchard, but not where we picked them. Brought two bags of apples. One to eat and one to cook with, plus freeze. Caroline got her red hots while she was there too. Thanks Uncle Eric!!

We stayed home most of Saturday. I did take Caroline to mall that night. She got a new pair of jeans and I put a jean skirt on hold for her. It is hard to find a long jean skirt, but I did find one at Christopher and Banks where I still get my discount.

We had lots of food to eat. I had put a roast in the crock pot. Mom called and said Dad had fixed enough fish for us to have too. I went down after the brothers and sisters got done eating and came home with another meal.

Received mail on Saturday from Joe's attorney. He is taking me back to court. I should have know it was coming, but I feel like I've been knocked down again. The last time we went for support there were 3 kids and I made about $20,000 more a year. I am not sure what will happen, but I won't be able to get an attorney. No money. It seems like every time I turn around money is being taken from me. I am trying real hard not to be bitter toward school, but I feel I could still have my job. I am trying so hard to find a job , but it has not been easy.

I go to court on Wednesday, October 20th. Please pray that all goes well. I never know what to expect.

Apple Orchard

Getting ready to go to the apple orchard today. To my surprise they offered me $35.00. Wow what a shock. I was hoping for the extra money so I could have Christmas money and little for this weekend. We are going to the apple orchard. So this bad news just sent me spiraling downward again. I am without a full time job because of other people. I still don't feel like I had to be the one let go. I feel that other people have not been truthful with me and used me as the scrapegoat. I have felt like I would have been let go a few years ago just because; however, mom was still there. Now that she will be retiring it was easy for them to let me go.

I worked in a ministry and did it as a ministry. God blessed even though I took a cut in pay and I made everything come together. Now I feel that I am not able to provide for my family. If I didn't have my brother, we would be on the street. If my parents didn't help provide money for lunches, Caroline might not get a special lunch from time to time. I know my kids, well just one now, has what see needs and I shouldn't spoil her. I like being able to something with her from time to time.

I know that God's timing is not my timing and I must wait upon the Lord. I think of him often and what he would think of my kids. For many years, I was bitter and ran from God. Thankfully, He is a loving and forgiving God.

Now I see that God might be using me in the life of a young girl at church. A year ago she lost here very best friend in the whole world. they were inseparatable. Her friend was killed in an accident and she can't get over it. she can't move forward, she is so angry and now feels like she can't love again. I can only hope that my words will help her. I ask that you pray with me that I will say the right things and show the compassion that she needs. I don't want her to make my mistakes.

She thinks she will never get over it and never forget. I try to tell her it will get better and easier. she doesn't think so. I assure her that it will get easier and I don't promise her she will ever forget, but she can move on in time. I just don't want this to ruin her life and what God has for her.

i just want to be used by God in some small way to help her.

Fall

I am so ready for the fall weather. this means holidays are coming and I love to cook for the holidays. Last year I learned to make pecan pie and buttermilk pie. I am looking for another great recipe to try this year.

Holidays make me think. I think about who has left us in the past years and what we have missed from them. Maybe what we could have learned from them and what we missed because they left us so early.

Iwas going through papers today and I really want to start something for my scrapbook that I can pass down to my children (and other family members). I am going to send a letter to each of my aunts and uncles asking questions about growing up. We are going to miss out from Aunt Lucy and we could have learned so much from her. I learned from her that God gives us only what we can handle. I think of all the years that she took care of Michael. Yes, there were times she might have been upset with him, but don't we all with our children. I think if I could do that and I know that I want to be like Aunt Lucy and always have patience with my children. Love them no matter what.

Okay back to my letter -- I would like to use this and put together a book with pictures from past through the present. I may even ask help from my cousin Gretchen. She is really good at this. Again, I wish I could be like Gret too. She has so much going for her and makes a wonderful mommy. I learn from her all the time. Thanks Gretchen -- I love you. I am thinking I need to post a picture of you and Uncle Norman. It is so cute.

Apple orchard coming real soon. I think we are going on Friday. We look forward to this each year. I will put out pictures too.

Not much really to write about today. It was a good weekend. I worked at CJ Banks both Saturday and Sunday. After work on Saturday, Mom and I went to the Christmas Shoppe and just took our time looking around. I didn't get one thing done in my house and I'm sitting here doing nothing again. Tuesday is my long day /6a-6p so that makes me really tired. I am planning on fixing breakfast for Lynda tomorrow. She likes eggs, sausage and biscuits. It will be fun.

I have already started my Christmas shopping. I have found great deals. I have bought one item for $20, but the rest were under $10. I am excited about finding great deals. I have to watch every penny since I don't have a full time job.

Well, I must be getting off and getting to work around the house.

Challenges

I have not been very faithful lately about reading my Bible and praying. We had it at Aunt Jody's this year. The pool is not fixed (and probably won't be), but we still have lots of fun. The kids were able to run around in Aunt Jody's yard and Joyce Moore's yard. The swing set was busy all day. We had lots of good food and great fellowship catching up with family. It is always good seeing everyone. I think it was counted that we had 60 in attendance. I will try to post pictures later.

I am thankful for family and that we can continue to get together. All the brothers and sisters were there, but not as many of the cousins. I was able to go shopping with my mom. Actually she called me and wanted to meet me after she got her nails done. We went to the Christmas Shops cuz we love that place. Prices are great and they have lots of things - different things. One that I went to buy was a five shelf bookshelf for my scrapbook room. Mom loaned me the money. WE found the shelf and then went to look for baskets to put in them. We looked and found them ranging from 3.99 to 6.99 and decided to keep looking. As we went out, we found an isle that had plastic baskets. They would have worked, but not what I wanted. Mom looked down and found baskets that fold out and you put a piece in the bottom for firmness. The best part - only $1.00 a piece. I was able to get 4 medium sizes and 2 small sizes so for $6.00 I was able to get enough baskets. That was the cost of one basket. The Lord is good.

scrapbook room

I am beginning my task of working on my scrapbook room. It is just a feeling, but I can't shake it. I am just going to continue to pray.

Chicken Pot Pie

Well I thawed out 3 lbs of chicken today because I was going to fix supper for mom and dad. They already had a pot pie in the freezer. So I cooked up the chicken and made a pot pie and will use the rest later. I love my chicken pot pie recipe. I found it on the web. It is quick and easy.

1.5 lbs of chicken
4oz of cream cheese
1/2 cup of Italian dressing
1/4 cup of chicken broth
1/2 tsp of flour
10 oz frozen mixed veggies
refrigerated pie crust

Heat oven at 375F.cook chicken in dressing. Add cream cheese, broth, flour. Let this thicken up then add frozen veggies. Cook for about five minutes. Put mixture in pie bowl (I use a larger pan). Then add pie crust to top of mixture. I pinch the crust around the edges and then I cut slits in top of crust. Cook until crust is browning. It is such a wonderful recipe.

My bunch really loves it. It is easy and not much to clean up.

Hope you enjoy this .

Summer

my first day of my three day work weeks. Our enrollment is down and we need to have at 190 for me to keep my job. I know that God is in control; however, I am torn as to whether or not to look for a job. Maybe God is using this as a tool to draw me closer to Him, to trust Him more and lean on Him. I know it says to Trust in the Lord with all thine heart and I will do that. Just keep me in your prayers.

I know that Caroline will be devastated if I am not at school. I have been there since she has been in K4. I love being home with her in the afternoons and during the summers. One of our teachers got to feeling very bad - dizzy, chest hurting, inside shaking-, so I took her to CVS to check her blood pressure. It was really high so I took her over the St Francis BeechGrove. Well, it was the whole afternoon at the ER. We left school at 12:15 and got back about 3:15. Everything was fine. She had a run in with one of the students and it really upset her. I am glad that I was able to be there for her. Believe it or not, she was one of my teachers when I was at BA. Her husband was one of my teachers too.

Some of our high school students went to South Bend today for Academic Meets. We had a very good day. We came home with lots of 1, 2 & 3 places. I have not heard about our choir, but they were very good.

Well, I have to get ready for bed. A big day tomorrow at CJ Banks -- Friends and Family with 40% off the entire store.

Almost the weekend

Well, it has been really busy around here. Tuesday night was the ladies meeting at church. It was a good night. Mom, Lisa and me fixed supper. I will post the recipe later. It is a taco dinner and all fixed on top of the stove. One of the girls in mom's class made it for a demonstration speech. It was really glad. One of the other girl's made a supper with boneless chicken breast and chicken stuffing. It is really simple. Simple is good.

It has been a very long week. I got up this morning wanting it to be Friday. Glad it will be Friday. Stomach bug. It was a good week. Last night was a fun night because Kevin and Tracye were in town to visit for a while. We went to Mom's and visited. Uncle Dub surprised Kevin. They didn't know he was in town. It was good. Those boys are so funny. Bradlee is filled with energy. He never stopped. He took a real liking to Caroline -- or in his words "her". He asked if "her" was coming back. Tracye told him Caroline's name, but he kept saying "her". Peyton, Bradlee and Caroline played with cars. It was fun to watch. I took lots of pictures. I will try to post later today.

I am glad that they stopped here to visit. We had not seen them since Peyton was small. It makes us realize that time is going by fast and our generation will be losing those loved ones closes to us. I hope and pray that we will have a good turn out at this year's Homecoming. We have only lost one aunt of the brothers and sisters, but others are getting up in years. We don't want to miss any time we can spend with them. We all want to think that our parents (even grandparents) will live forever, but that is not God's plan. We need to make the most of the time we have.

Have a good day!

House cleaning

Any suggestions or ways you do things? Maybe I can learn how to post some pictures for you.

Homework

Why do kids come home and say they have homework? It seems I do more of the homework than they do. Unfortunately, I'm not the best in Math so Caroline goes to Uncle Eric. Thank goodness for Uncle Eric. It makes my life so much easier. Now when it comes to taking test over Science & History, I think I could make 100 by the time we have studied for two weeks. I am glad that Caroline wants to make sure that she gets good grades.

It was a busy day at school. We had privilege day. The kids pay to get to have a half day of fun. I am helping with the yearbook, so I made sure we had lots of pictures. It was fun to see the little ones especially. Everyone including the seniors. I have several that I have tried lately. One that is really like in my house is Upside Down Pizza. It is so easy; however, I have made it to be my own and don't follow the recipe completely. Here it is:

1 lb of Hamburger
2 small jars of Pizza Sauce
mushrooms
Italian seasonings (optional)
Mozzarella Cheese
Biscuits (10 count)
Pepperoni

Brown and drain HB, add seasoning, mushrooms until hot. You can add other toppings if you want, it depends on what you like on your pizza. You put in glass dish and top with pepperoni, cheese and biscuits. You flatten out the biscuits out and place on top of mixture. You bake at 400 degrees for 15 minutes or til biscuits are browned.

My family really loves it. It is a quick and easy dinner.

I several other dinners with chicken. I finally have my own laptop that I can use whenever I want. I love it. Now I can get on the computer more. I want to try and write more of my feelings down. One thing I would like to do is to pass along some of my things from my devotion reading. I think I will remember it better if I can share it with others. I hope that it will help me and others by putting down my feelings.

I have been reading Elizabeth George "A Woman's Walk with God - fruits of the Spirit". I have really enjoyed it. We have read about the fruits and heard someone preach on them; however, it is not always easy to put them into practice. Isn't it easier to stay angry or mad at someone instead of loving them. Isn't it easier to want it now than to wait for patiently for God to answer our request. Showing kindness to others when we would rather push them out of our way to get where we need to be. Now at the end Mrs. George is showing how our sinless Saviour did all that. He kept quiet before his accusers. He loved them even when they found no fault in Him and sent to the cross anyway. Wow, what a Saviour we serve. My prayer each day it to be more like Him. To have Him help me walk in Him and show these fruits more.

Everyone have a great evening.

Father's Day

Hope everyone had a good Father's Day. I sang the special at church and made sure it was one of Dad's favorite songs. I know he enjoyed it. I had gone shopping and purchased a couple of shirts for him from everyone. He will look great in them. Mom really liked them.

I can't believe that 28 years have gone by with my real Daddy in heaven. That is a long time. Some times I can't remember what he looked like or sounded like. Of course, I can look at my brother and see daddy daily. Way to go, Bub. Speaking of brothers, I gave him something special yesterday too. He does a lot for our family and helps with my kids. He is a great brother.

My suggestion to those of you who have your dad here with you -- tell them often how much you love them, call often and give out those hugs and kisses. If you have fallen away from your dad or parents, make it right ASAP. You never know what God has planned for tomorrow. I can assure you that we did not expect to tell Daddy good night on Wednesday, have him go off to work and then never come home. We children never get to big to give out loves, hugs and kisses to our mommas and daddys. Do that today!

Mondays

It is Monday again. He had Caroline help straighten up the living room. Now mind you, it is not completely clean, but looks very nice. He took all the dirty laundry and towels downstairs and folded what needed to be folded. He is trying to work some magic on mom. Well, he did his phone back. We should be grateful every day, but we do forget. Today, I am grateful that my parents are able to help me in Bible School. Working in the kitchen isn't an easy job, but we have fun. It is good to be able to work with them and work as a team. We had lots of fun!

I am thankful for my family. We have our trouble times, but they are my family/kids. Each one is different and has to be handled different. Caroline told me last night that she wasn't leaving home (I forget what we were talking about) and I laughed. I told her she would when she gets older. "Oh yea" she said. Of course, I have to be thankful for my brother who puts a roof over our head every month. He stretches wherever he can to make sure he gets the rent paid. How many brothers do you know that would be living with their sister and 3 kids? Not too many. I never imagined that I would be going through these hard times. he just turned 17 and thinks that I should take my hands off. What kind of mother would I be if I did that. I can just imagine my mom telling her mom that she wanted control of her own life. Well, I might not have my mom. I'm not sure where to go from here. I've grounded him pretty much the whole summer (and yes it is that bad), but I'm not sure that will even help. He doesn't even talk to me. His dad leaves him with me instead of taking him on the scheduled days because he doesn't want to deal with it. Go figure. I am just hoping that things will change. We had a great time and I didn't buy a single thing! Aren't you proud? I know Mike will be happy. We came across the cutest little store that had all sorts of handmade things for the home. I saw a wall sign that I thought was so cute. A little irreverent I guess, but it really struck my funny bone. I would have bought it if it had been in the budget. It had a darling 50s era picture of a little girl praying and it said:
Jesus and germs are everywhere so wash your hands and say your prayers"

Of course with the swine flu, hands need to be washed constantly. Several people called it different things, but I like that name as it really is the easiest dessert to make. It is like a dump cake. Here is the original receipe

1 can pineapple (undrained)
1 can cherries (undrained)
1 box yellow cake mis
1 stick butter
Nuts (walnuts, pecans, etc)

Dump out can of pineapple.
Dump out can of cherries
Sprinkle cake mix over fruit
Melt stick of butter and drizzle over top
Add nuts.

Bake at 350 for 30-40 minutes. Add vanilla ice cream and eat.

One suggestion was peaches. I used 1 large can and 1 small can of peaches. (I'm not a cherry fan.) Then followed the rest of the receipe and added walnuts on top. It is great and very easy. I'm thinking about using apples next time. It is just as good the second day. It is a little sweet for me; however, there is no sugar added just the juice from the fruit. I think it is great and can be made in a hurry.

Hope you enjoy!

Pictures

I love Shutterfly.com. It is www.apronmemories.com. I love to ready the stories and see the articles. As I've said previously, my grandmother, Mammie Nettie, always wore an apron. I think the only times I didn't see her with an aprong was church services and special occassions. It just brings back lots of memories. My mom has many aprons and some of them have stories that goes along with them. Caroline got saved Wednesday night at Awanas. Well, before Awanas. She was riding to church with Uncle Eric and they started talking about when he got saved. She said she asked Jesus in her heart when she was 4, but not real sure. He hurried to church and got her to Mrs. Isoms. What a blessing. I'm a proud mamma. I'm also proud that all my kids have proclaimed to be saved. What a testimony to my upbringing. I'm thankful that my parents started going to church when I was 10 and I got saved. We have been in church ever since.

Aprons

I found a new website. I found out yesterday that my cousin took his own life. I was hurt then I became angry. Why would someone do that and not think of the family, dad, mom, brother, sister, etc., that they are leaving behind. I think it hurt more because I idolized him while I was growing up. I knew that he would protect me, but he loved to tease me too. He was so cool and how I loved him. I guess that is what hurts the most. Maybe I'm just a chicken too, but I couldn't even think about ending my own life. I was not in his shoes and I know he was sick, but still it hurts. I think of my uncle who has to go through this and his health is not the best. There is a twin brother that is now alone and how they loved each other. Some times I feel numb over the whole thing too. I'm glad to have a Heavenly Father who will hold me tight and my family tight in His arms as we all deal with this.

Tuesday

I can't believe it is already Tuesday. Where does the time go? It was a good weekend. Saturday was filled with finding AJ's car. Well, we knew it had been towed, but had to retrieve it. Funny story, he was parked wrong way on a street and someone had called to have it towed; however, I forgot to put on the new tags so that made it that much worse. We did a lot of running that day. he got is car back and that was the most important thing.

We had a good Sunday service. Mom was home sick, but most of my kids were with me on my birthday. Tyler and Ashley came to church with me that day. We were all going out for lunch, but with Mom sick we postponed it until later. They were taking me to Red Lobster and my kids do not like that very well. So maybe on Sunday it will just be me, Eric, mom and dad. We all love it there.

Chicago

I returned Wednesday night from Chicago. We left Tuesday around 12:30 p.m. for a few days in Chicago. My friend, Anita, was able to get tickets to the Oprah Winfrey show. It was really fun. Not a positive topic (tent cities in America), but it was just fun to be there and be on the set. We were not in the front, but very close to Oprah. She even looked at us a few times. It was great! We spent quite a bit of time on the Magnificent Mile and shopped. The prices were a little high, but it was fun. I did get to go to the American Girl Place and shop. I was so excited. It was the best place I shopped. I can't wait until I can take Caroline this summer. It was cold, but fun. I think we will make this an annual trip. I will plan on taking 2 days off so we can do even more shopping.

God answers prayers

Just a small note on my brother, Eric. he was under some big debt and I can't go any further; however, God takes care of us even when we aren't expecting it. Sunday morning we had an old youth pastor back. Kevin and Doreen Schmidt were there for the couples retreat and then Kevin preached in the morning service. It was about the right and wrong kind of judging. We all know the verse that says "Judge not, lest ye be judge"; however, he spoke on what kind of things we should judge and then the sinful judging. It was a very eye opening message. Things that I really need to think about and ponder on to make myself a better servant of Jesus. It was good to talk with them after church for a little. I hope all who attended church had a great service.

Memory Lane

My mom just brought me in some black walnuts. Not for me and my family. 28 years ago yesterday my dad never came home from work. To me, he was the best daddy in the whole wide world. I'm sure all girls feel that way about there dad. On Wednesday night, 2/4/81, my dad & I went to church by ourselves. My mom or brother (one of them) didn't feel good and stayed home. I got to spend my last night with my dad at church. The next day, my dad was hit by a train while at work. My whole world was turned upside down. I remember my Pastor coming to my high school to tell me and my brother what had happened. It was a very long ride home. I was two weeks from 18 and my brother was 8, to be 9 in April. I some times think about what it would be like now if my dad were still alive. What things would be different, how my life would be different, how he would enjoy his grandkids. As my mom tells me, we only know that God is in control and we must look at things today not on what ifs. I still have days of when I don't want to think about him being gone. Some times I think I can't remember his face or his voice. There are times when I wish he was just here for me to talk to; for me to let him help easy my problems and pain. He was my bestest daddy in the whole world and I still miss him. You hear that time heals the heart, but that is not true. It makes it easier, but the hurt is still there.

Be thankful each day for your family, your parents, your siblings, your life. I know that God is my strength and I can do all things with Him.

Migraines

I hate them. I like the pure white snow, it reminds me of when Jesus washed my heart from sin. I found this on the 50's Housewife. I love to see her blog. She has a lot of good things that I want to try or have incorporated. here is the receipe.

INGREDIENTS * 6 skinless, boneless chicken breast halves* 1 tablespoon butter* 1 cup chopped onion* 1 green bell pepper, chopped* 1 red bell pepper, chopped (I left this out because I didn't have one)* 2 cups shredded Cheddar cheese* 1 (4 ounce) can diced green chile peppers* 1 cup green salsa* 1 cup chopped fresh cilantro* 4 teaspoons ground cumin* 2 chipotle peppers in adobo sauce, chopped* salt and ground black pepper to taste* 12 (7 inch) flour tortillas* 10 ounces shredded Monterey Jack cheese* 1 cup whipping cream* 1/2 cup chicken broth

DIRECTIONS1. Bring a pot of lightly salted water to a rapid boil over medium-high heat. Add the chicken to the boiling water; cover. Cook 15 to 20 minutes; drain and set aside.2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 baking dish.3. Melt the butter in a skillet over medium heat. Cook the onion, green bell pepper, and red bell pepper in the melted butter until just soft, 5 to 8 minutes; transfer to a large bowl. Add the chicken, Cheddar cheese, green chile peppers, salsa, cilantro, cumin, and chipotle peppers to the bowl. Season with salt and pepper; mix.4. Place about 1/3 cup of the chicken mixture along the edge of a tortilla; roll tightly into a tube. Place the enchilada, seam-side down, into the prepared baking dish. Repeat until all the chicken mixture is used. Sprinkle Monterrey Jack cheese over the enchiladas. Whisk together the whipping cream and chicken broth in a small bowl; pour over the enchiladas. Cover the dish with aluminum foil.5. Bake in preheated oven 30 minutes. Remove foil and continue baking until cheese is completely melted, about 10 minutes.

Hope you like it too.

Kids

Well, it was a long Saturday night. One of my oldest got in a little trouble. Being where he wasn't suppose to be and telling me he was some where else. As the Bible tells us, we will be found out by our sins. He couldn't hide what happened and then had a friend in the middle. Well, needless to say, he is grounded for 30 days -- no work out and no car. I can only hope that he will learn from his mistakes. As I've told him, I have always been open about things I did to show my kids from my mistakes and hope that they would make wiser decisions. I can only pray that God will allow me to know what decisions to make and make the best ones for each child.

Prayer

I'm so glad that we have a God that is still in the business of answering prayers. What a blessing! God is good and answers prayers. I finally got to hear his voice, which was good. The week before his surgery he was very quiet and just smiled, which is not like Matt. He is a teaser and we have fun picking on each other. It just wasn't the same. Now I have extra built up to pick on him. He can't get out a lot yet, but at least he is at home with his family. His dad and brother in law went over and put up a bed in the living room so he doesn't have to climb any steps. He can sleep downstairs and walk to the bathroom or family room to watch TV. The kitchen is right there so he doesn't have far for that either. I just can't thank God enough for His mercy and goodness. One of Matt's big worries was his hair. From what I understand, it is a small part and he can do a comb over to cover the spot. He will have 44 staples removed on tuesday.

God is good

Matt is now out of surgery. It was a very long day yesterday. 10 hour surgery; however, the tumor is all gone. They won't have any test results until the end of this week, but all looks good. He was awake last night and spoke with Lisa and the kids. However, the pain is worse today.
When he spoke with Lisa last night, he said "God is great". What a testamony that was to see his belief and faith. God is good to all of us, but sometimes it takes something life threatening to make us see it more clearly. Saved all since 10, I sure do forget how God loves and protects us.
Matt's surgery started at 8 am and will be 10-12 hours long. Last night the pastors and deacons went to his house for prayer and anointing of oil. Matt told Lisa that he really, for the first time, had peace about the whole thing. I'm glad that God can give us this peace and it only comes from Him.

Prayer

Matt Peck will be going to Methodist Hospital on Monday for surgery to remove a brain tumor. Please pray for him and his family. God has been very good to everyone and blessed greatly. God's grace is always sufficient. It will be a very long surgery. The staff will come out each hour and let the family know how it is going.
Matt came home for a few days to rest. Both Matt and Lisa have been able to rest and sleep in their own bed. Matt will be in the hospital for 3-4 days; however, he can't drive for 6 months because of the seizure. He is a little down about that. He needs encouragement as he has come to realize what is going to happen on Monday.
It has been a very busy week due to trying to help with the boys and make sure they have dinner lined up. The church family has been so gracious as well. Several families have done the many things, i.e. supper, grocery shopping, fixing little things around the house and even staying the night for Lisa's sanity.
I will keep updated as time goes by.

Back in the saddle

I hope to be back and try to post more each day. I get things from this website a lot. I may pass things along as I go.

Empanadas

2 tablespoons olive oil
1 package refrigerated pizza dough (about 1 pound)
Flour for the work surface
1 16-ounce can refried beans
1 1-pint container fresh salsa
1 8-ounce package shredded Cheddar Sour cream (optional)

Heat oven to 400° F. On half of each round, spread some of the beans, then top with 1 1/2 tablespoons of the salsa and 2 tablespoons of the cheese. Fold over the other half of each round, covering the filling, and press the curved edge with your thumb to seal. Lightly brush the tops of the empanadas with the remaining oil, then transfer to the baking sheet. Bake for 12 to 15 minutes or until golden. Serve with a dollop of sour cream, if desired.

Dinner Calzones

1 1-pound ball of dough
1/2 cup tomato sauce
1 cup of any 2 of the following: sliced (cooked) Italian sausage, pitted olives, sautéed mushrooms, sautéed bell pepper, sautéed spinach 2 1/2 cup grated mozzarella

Preheat oven to 400° F. Sprinkle with 1 1/2 cups grated mozzarella. Brush the edge of the dough with water. Fold the 2 sides together, pinch the edge to seal, and roll the edge slightly. Prick the top several times with a fork. Transfer to a cornmeal-dusted baking sheet. Let rest 10 minutes. Sprinkle with another cup of mozzarella. I saw it in a magazine. I was called Fun n Stitch. I didn't get that exact item, but something similar. I am really excited about trying it. I am really excited about getting back to scrapbooking. It has been summer since I did anything. I wish I had a bigger place to organize it all, but I love to look at the pictures and scrap about it.

I am really wanting to do a receipe book. I just can't seem to get the time. I want to get with my cousin so we can do a family book. I think it is very important to use family receipes. I love the memories of making breakfast at Mammie's. Mammie would make homemade biscuits and I even got to help help roll out the biscuit dough. When she was done, I got to make little biscuits. Pa Jim said they were the best. Not sure he really meant it. It was fun though.

I remember canning and freezing food with my mom. I am not a gardener, but my mom is the best. I helped in the kitchen, but not outside in the garden. We even made our own summer sausage too. Those are the memories to keep.

I hope to post more and add more things about what I love to do. Pray for us. My little girl, well not so little, had a rough time on Friday. It was her weekend to go with her dad. She really didn't want to go. (we've been having this problem) She teared up before he even got in the door. She cried for 5.5 hours before he called and told me to come and get her. There were many phone calls between that time, but I thought she would eventually stop. She did not. Of course, I would have gone sooner, but I have to follow the rules. Her dad is very upset with me and thinks that I am saying things at home to make her feel this way. He asks her so many questions and there are only so many answers, none of which he likes. She was very content to come home and stay with me. She still had to stay with friends as I had to work my second job, but that was better for her. I just don't know what to do. It broke my heart to hear her crying on the phone. Then to come home and tell me things that her dad and grandma would say. I'm sure it was a rough day for her as well. Divorce is never easy and I hate putting my kids through this, but I did what I thought was best. The mental games that got played was way to hard and went on way too long.

Thanks for anyone who is listening. Any ideas would be great.

Kids

Well, I haven't written in a while, but life sure has been busy. Just last week alone, I spent many hours in the hospital on Tuesday with my 19 year old son. He was not feeling well on Monday, but not running a fever. I received a call at 2 a.m. that he was in the ER and wanting me ASAP. He had emergency surgery at 5 pm that night to remove his appendix. It is never easy to see someone go into surgery, but your baby. You know that God is in control; however, you can't be there to hold his hand or even help the doctor (you know they always need the mom in there telling them what to do). I went on 4 hours sleep that day and never could quite catch up. He did come home Wednesday and I stayed with him that day too. I'm thankful for a good job that wants me to be with my kids. Matter of fact, I planned on working Wednesday afternoon, but they told me to stay with Ty. He just went to the doctor today and has to be off work the rest of this week. Thankful that he has a good job too (and money saved). Ty has a wonderful girlfriend that also helped when I couldn't be there.

God is good even when we don't deserve it. For that I am thankful.

I will write more lately. I have lots I want to add.

Missing my kids

As you can see, it has been another busy few days. I don't always get on the computer. My kids are now gone with their dad for two weeks, except Tyler but he works nights. I am sure missing the noise that goes on around the house. It is fine for a weekend because I know they will be home in a couple of days. Now I have to wait 15+ days. Caroline is calling every night to see how things are going here. She ask me to pray with her each night. How precious. We pray each night before we go to bed. Maybe it makes her feel better while she is away. I don't hear much from AJ, but I'm sure he is fine. He was helping his dad in the wood shop on Saturday. He wants grandma to show him how to cook. I am excited when comes back because I have a couple of recipes I want to show him. I am thankful for my children. I know as they grow they will start a life on their own. I can only hope they will want to come home to visit from time to time.

Sunday services

Hope all who attended church had a great service. We did. I really enjoyed PM services. A character I want to have is one my kids can remember that I tried to live serving the Lord. Pastor talked about the inheritance that can be left for our kids and grandkids (way off for me). most of us won't be able to leave a lot of money, but we can leave other things. An example in living for the Lord, memories of family and things done, showing them the way to have a home in heaven, etc. These are so much more than what money can buy. I'm thankful for a godly grandmother that raised my mom. I never heard Mammie use a bad word (stupid was a bad word by the way) and not sure I even saw her get upset (unless we didn't let Chris join the older cousins). However, she taught us that Sunday is the day for the Lord. She did not work on Sunday, she was faithful to her church and faithful in her prayers. She lived long enough to see all eight of her children saved as well as my grandpa. Pa Jim was in his 70s before he got saved, but what a joy it was when he accepted Christ. I'm thankful for godly parents who got saved and became faithful in their church and serving the Lord as well. My dad has been gone for over 25 years, but I remember how he loved his family and the Lord. However, God allowed me to have another great man as my dad as well. He too loves the Lord. I know that my kids will have many great memories and I hope an inheritance that they will enjoy for many years.

Peach Cobbler

I just found a peach cobbler receipe at www.hillybillywife.com I have not tried it yet, but hope to fix it this week. I have posted the receipe for anyone who would like to try it. Let me know what you think. She also had an easy pie crust. Can't wait to try that one as well. I normally buy my crust, but I know I have the things at home to make one. My grandmothers made their own and it was always delicious. I just figure it was easier to buy one, but I want to make more things. Here is the receipe:

Crust:
1 cup flour
1/4 teaspoon salt
1/3 cup shortening
3 tablespoons cold water
Filling:
2 - 29 ounce cans of peaches
2 cups juice from the canned peaches (add water to make 2 cups if necessary)
1/4 cup cornstarch
1/2 cup sugar
1 tablespoon lemon juice
1/4 teaspoon nutmeg

First prepare the crust. In a large bowl combine the flour and salt. Add the shortening, and mash it into the flour until it is crumbly. Add 3 tablespoons water and stir to combine. Now use your hands to press everything together to try and form a ball of dough. If it is too crumbly, then add more water a little at a time. You may not need any water. You may need another tablespoon, maybe even more. Keep pressing and gently kneading the mixture together until you get a stiff pie dough. Rip off two sheets of waxed paper. Place the ball of dough between the sheets and flatten it some with your hands. Use a rolling pin, or sturdy bottle or jar to roll the dough out between sheets of waxed paper. Work slowly and diligently, trying to make a large rectangle, a little bigger than your baking pan (I use a 9 by 9-inch square pan, but a 2-1/2 quart casserole would also work very well). It doesn't have to be perfect, so just do your best and don't worry about it. When you are done, set the dough (still wrapped up in the waxed paper) aside while you prepare the rest of the recipe.Drain the juice from the canned peaches into a measuring cup. If you have more than 2 cups of liquid, you can drink or discard the extra (I put it in kool-aid usually). If you don't have 2 cups of liquid, then add enough water to make 2 cups.In a very large saucepan, combine the cornstarch, sugar and nutmeg. Gradually stir in the peach liquid, and the lemon juice. Stir to dissolve the cornstarch. Heat the mixture over a medium flame, stirring very frequently. You could even stir constantly, if you had a mind to. Bring the mixture to a boil and boil for at least a minute, or until the mixture is very thick. Remove the pan from the heat and gently stir in the canned peaches. The mixture will thin out some. Turn the thick peach filling into a well oiled 2-1/2 quart casserole dish, or an oiled 9 by 9-inch square pan.Loosen the waxed paper on both sides of the rolled out crust. Arrange it carefully on top of the filling. Crimp the edges if you have enough dough, otherwise, just let them lay where they fall. Score the dough into 6 servings. Bake it at 425° for about an hour. The top will be golden brown, the filling will be bubbly, and it will be very hot. Allow it to cool for a little bit before serving. Great with whipped topping or vanilla ice cream. This is a delicious way to make a very elegant dish out of inexpensive canned peaches.

Hope you like it.

Grilling

My middle son, AJ, is really wanting to learn to cook. He has started by grilling boneless chicken breast with BBQ sauce. He does a very good job. He made them for us again last night. He normally puts his on a bun with more BBQ. I did that too last night; however, too much bread for me. Next time, I will just eat my chicken without bread. He said that he wants to learn more, so I told him I would start showing him more on the grill and other things as well. He is the one I don't have to worry when he goes on his own. He can do laundry and now wants to cook. However, my oldest, well he lives on pizza rolls or pizza. Feel for his wife :(

Any way, AJ grills each side and gets them almost cooked. He then puts BBQ on one side while the other finishes and then turns for BBQ on that side. He is cooks on the top rack so it does not get done on outside too fast. He is really getting good. I hope to show him more on the grill later.

Games & cameras

I love to play games on the computer as well. One great place I have recently found is www.king.com. It has a lot of great games and they are free.

I also love my digital camera. I got a new one with my tax return. It has more megapixels and takes really good pictures. I have found that use Shutterfly.com when I put my pictures on CD. I can create photo books from there as well as get a great price to develop my pictures. I would rather scrapbook, but it is fun to make a book on Shutterfly as well. I recently made one up from our family reunion after my aunt has passed away. It was a sad time, but great memories. We get together every year at my mom's house (kids love the pool) and that seems like the only time we get to see our extended family.

I'm not sure if I'm using this correctly or not, but I am having fun. I have also found some really need websites that I will share later.

I'mback

As you can see, we are busy. What a blessing I have found from several different sources. I am hoping that I will learn how to add those sites to my blog so I can share them with others. I took a few minutes to read as well. I love Christian fiction. I am reading Karen Kingsbury right now. There is a series out there on the Baxter family. If you like to read, I suggest you pick these up. I did not read the first set as I didn't know it was a series. I started with with the ones on Duane Matthews and Katy Hart, but I will go back. Family is very important and it shows in these stories. God needs to be the center of our families at all times. Have a good day!

First day of blogging

Well, I have entered a new world. I am trying this blogging thing. I have enjoyed others and thought I would see what I can put out there. As a single mom of three, though one is 19, our lives are very busy. I work 2 jobs as well as trying to keep a home. I am always looking for ways to better organize and find money saving tips. Did I mention my brother also lives with us? I couldn't make it without him. In today's economy, I want to find savings any way I can. I hope to hear from lots of people and learn more about blogging. Talk later!
